My Blogversary, a Mini Giveaway …

Today is my one year blogversary!  This is a very big deal to me.  All of my life, I have been a “start this and never finish it kind of girl” so a year of anything is quite an accomplishment! 
Over the past year, I have published 60 posts, received 309 comments and gained 136 subscribers and followers.  I know that these numbers may not be impressive or huge to most but to me they are. 
Thank you so much for letting me share my life and recipes with you.  I am truly enjoying this little blog of mine and am so thankful for each one of you who reads it.
In honor of my one year blogversary, I am doing a mini-giveaway.  The winner of the giveaway will choose which of these well-loved items in my kitchen they would like in theirs:

Mint Chocolate Cupcakes anyone?
Mint Chocolate Cupcakes
Filling:
8 oz Cool Whip
8 oz cream cheese, softened to room temperature
1/2 cup sweetened condensed milk
20 Keebler Grasshopper Mint Cookies, crushed
Green food coloring
Cream cream cheese with an electric mixer until smooth.
Add sweetened condensed milk
and mix well.
Add the crushed cookies and mix on low until evenly blended.
Fold in Cool Whip carefully until evenly blended.
Add green coloring, a drop at a time, until you achieve desired color.
Let filling set up in the refrigerator for about an hour.
Lay the cupcakes on their sides and carefully cut the tops off. Set tops aside.
Spoon the filling on top of the cupcakes.

Place a cupcake top on top of each and press down gently.
Enjoy!

Pumpkin Pudding Cake

I don’t usually like the rain but I must say that I have really enjoyed the last couple of days of it.  On occasion, being stuck in the house on cold rainy days can actually have its benefits.  This weekend we enjoyed a cozy fire, hot chocolate, lazy pajama days, breakfast for dinner and even some pumpkin pudding cake…
Pumpkin Pudding Cake
Pudding Ingredients:
1 (13oz) can pumpkin
1 (12oz) can evaporated milk
3 eggs
1 ½ t. cinnamon
¼ t. ground cloves
¼ t. ginger
½ t. nutmeg
½ t. salt
1 C. sugar
Topping Ingredients:
1 box yellow cake mix
1 ½ cubes butter, melted
Preheat oven to 350.
Mix pudding ingredients with a wire whisk.
Pour into 9X13 glass pan.
Sprinkle 1 yellow cake mix evenly over top.
With a spoon, SLIGHTLY swirl cake mix and pudding together.
Be careful not to over swirl, there should still be quite a bit of cake mix NOT mixed in.
Drizzle 1 ½ cubes of melted butter over the top.
Bake for 50 minutes.
Serve warm alone or topped with vanilla ice cream.
