My Blogversary, a Mini Giveaway and Mint Chocolate Cupcakes!

Today is my one year blogversary!  This is a very big deal to me.  All of my life, I have been a “start this and never finish it kind of girl” so a year of anything is quite an accomplishment! 
Over the past year, I have published 60 posts, received 309 comments and gained 136 subscribers and followers.  I know that these numbers may not be impressive or huge to most but to me they are. 
Thank you so much for letting me share my life and recipes with you.  I am truly enjoying this little blog of mine and am so thankful for each one of you who reads it.
In honor of my one year blogversary, I am doing a mini-giveaway.  The winner of the giveaway will choose which of these well-loved items in my kitchen they would like in theirs:

Either my most favorite food and cooking reference book…

or my MOPS cookbook which has many of my own and my friends tried and true recipes…
To enter the giveaway leave a comment telling me which book you would like.  For an additional entry, follow my blog or become a subscriber and leave me a separate comment letting me know.  The winner will be chosen at random and sent a new copy of the book they choose.  You have ten days to enter.  I will announce the winner on Saturday, November 21.
Okay now time for a little blogversary celebration
Mint Chocolate Cupcakes anyone?
Mint Chocolate Cupcakes
8 oz Cool Whip
8 oz cream cheese, softened to room temperature
1/2 cup sweetened condensed milk
20 Keebler Grasshopper Mint Cookies, crushed
Green food coloring
Cream cream cheese with an electric mixer until smooth.
Add sweetened condensed milk
and mix well.
Add the crushed cookies and mix on low until evenly blended.
Fold in Cool Whip carefully until evenly blended.
Add green coloring, a drop at a time, until you achieve desired color.
Let filling set up in the refrigerator for about an hour.
Lay the cupcakes on their sides and carefully cut the tops off. Set tops aside.
Spoon the filling on top of the cupcakes.

Place a cupcake top on top of each and press down gently.

    Those cupcakes look yummy, but if I am not much of a mint fan, can I use Kebbler Deluxe grahams for the crushed cookies instead??
