Banana Crumb Muffins

For the rest of you, go make yourself your own cozy drink and be sure to pair it with these amazing Banana Crumb Muffins.

Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted

1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees. Line a muffin tin with 12 paper muffin cups.
In a large bowl, combine 1 1/2 cups flour, baking soda, baking powder and salt.

In a separate bowl, mix the mashed bananas with the sugar, egg and melted butter.

Add the flour mixture to the banana mixture and stir until just combined.

Use an ice cream scoop to spoon batter into prepared muffin cups.

In a small bowl, stir together brown sugar, 2 tablespoons flour and cinnamon.
Use a fork to cut in 1 tablespoon butter until mixture resembles coarse crumbs.

Sprinkle crumb topping over muffins.

Bake in preheated oven for 18 minutes,
until a toothpick inserted into center of a muffin comes out clean.

    Saw these muffins and had to make them TODAY!  Thanks for sharing.  (P.S. I had to add a little spoonfull of peanut butter to the middle of each one.  :)  We’ll see how it turns out.)

    Made these this morning for a bake sale, they are beautiful! I think next time i make them, i’ll add a lil cinnamon &/or nutmeg to the muffin also, – just needed a lil more to it for my taste. VERY moist and yummy though.

    WOW! Made these this AM after searching for a new banana muffin recipe.  I had to choose this one b/c I was drinking my coffee out of the same “a” mug from Anthropologie (it was fate).  These muffins are delicious!  Very light and delicate in flavor and texture!  I usually don’t like a “crumble” on top of mine, but this ratio of sugar/cinn/butter is just perfect to give it a light sweet crunch without overpowering the muffin.

    Definitely will be making again … and again!  Thanks for the recipe!

    HI! I wanna make this recipe, but I want to make very moistured muffins so I was wondering if I could add some milk to it, like half a cup… what do you think? is it ok?

      These muffins are not dry at all. I think they are the perfect texture. If you decide to add milk to it, I would try maybe just a of couple tablespoons.

    I just made these an I am IN LOVE! The only thing I did differently was I added cinnamon to the muffin mix, but otherwise I followed the recipe exactly and they are awesome! Great job!!
