Mixed Berry Shortcake

This is by far my very favorite dessert to serve in the summer time.  I know that it isn’t technically summer yet and it it feels more like winter but summer will be here soon, I think…  Anyways, I say that we defy the weather and start the summer celebration early.  Let’s break out the berries!  Oh and the whip cream, and shortcake and maybe a bit of chocolate too :)

Mixed Berry Shortcake

Serves 8
2 cups strawberries, sliced
2 cups raspberries
2 cups blackberries
2-3 tablespoons powdered sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
6 tablespoons unsalted butter, chilled and cut into 1/2 inch pieces
1 cup heavy cream
1 cup heavy cream plus 2 tablespoons powdered sugar, whipped to soft peaks and chilled

Preheat oven to 425
In a large bowl, combine the berries with the powdered sugar. 
Toss to mix.  Set aside.
In a separate large bowl, combine the flour, baking powder, salt and granulated sugar. 

Add the butter to the flour mixture.
Using a pasty blender, cut in the butter until the mixture resembles coarse crumbs.
Gradually mix in the cream
until the dough holds together.
Turn out the dough onto a lightly floured surface. 
Roll out the dough into a 6-by-12inch rectangle 1/2 inch thick.
Cut into eight squares.
Place the squares on an ungreased baking sheet. 
Bake until the tops are lightly browned about 10-12 minutes.
To assemble, spilt the shortcakes in half horizontally
 and place the bottoms cut side up on individual dessert plates.
Spoon an equal amount of berries over each shortcake bottom,
then top with an equal amount of whipped cream over the berries.
Place the shortcake top gently over the cream and serve immediately.
It really is perfect just like this.
However if you are feeling extra indulgent, drizzle with a little chocolate ganache before eating this beauty up :)

    YUM! The dough part scares me….could I just forget rolling it out and just drop the dough onto the pan? I never thought of mixing powdered sugar with the berries…why powdered instead of granulated? This would be great to have on Memorial Day (hint, hint). :)
