Brownie Pudding

I remember when I first got married, I was just sure that every year my husband and I would do something special on our anniversary.  Well, we did on our one year.  We went to a little Bed & Breakfast in Julian and had a great time strolling the streets, holding hands, chatting, enjoying each other’s company and even exchanging gifts.
Wow, how times have changed!  We just celebrated our eight year anniversary on Tuesday.  I use the word “celebrate” quite loosely because we didn’t do anything particularly special this year.  The night before our anniversary Kevin told me that he was going to get me the necklace I have been wanting but now it’s no longer available.  Well that was okay with me because I was going to get him a card but that didn’t work out either.  Yes, a card.  That was going to be his anniversary gift but when I entered Papyrus with my kids in tow, it wasn’t long before the melt downs, arguing, and “mommy mommy mommy” began.  Needless to say, I left empty handed.
When I realized on the day of our anniversary that I still hadn’t gotten Kevin a card, I made the mistake of trying again. I packed all three kids in the car and headed to Safeway this time.  Did you know that at Safeway they give out sample cookies in the bakery? Bribery at its best! I told my kids that if they sat nice in the cart and didn’t argue that they could have a cookie before we left.  Well, they did.  They sat in the cart and they did not argue and we came home from Safeway with milk, bananas and of course their cookies. That’s right milk, bananas and cookies.  I forgot the card!  Of course, I forgot the card I was busy playing peek a boo with Drew, reminding Bella to keep her hands to herself and telling Caleb that he could not have the balloon he wanted.  How was I supposed to remember the card?
If you are a mom you know that there are few opportunities to go out in the day.  That was my one and only opportunity.  The rest of my day was full with lunch, naps, and tee ball practice.  What could I do to redeem myself on our anniversary?  Well if nothing else, I knew I could make my husband a good dessert… 
So later when Kevin arrived home from work with a card and flowers in his hands, he was welcomed with a messy house, 3 kids running wild, a slightly disheveled wife, a kiss and Brownie Pudding baking in the oven.
Wow, how times have changed! Marriage after eight years looks a whole lot different than marriage after one year.  Besides the flowers and the card that I received and the Brownie Pudding I made, it really was just another day in our crazy life. No date, no trip, no gifts just an ordinary day with the man I love, our three beautiful kids and some Brownie Pudding.  I am blessed.

Brownie Pudding
1/2 pound (2 sticks) butter, plus extra for buttering the dish
4 eggs, at room temperature
2 cups sugar
3/4 cup good cocoa powder
1/2 cup all-purpose flour
1 1/2 teaspoons vanilla
Preheat the oven to 325 degrees F. Lightly butter a 2-quart (1.8 Liter) oval baking dish.
Melt the 1/2 pound of butter and set aside to cool.
In a large bowl, beat the eggs and sugar on medium-high speed for 5-10 minutes, until very thick and light yellow.
Meanwhile, whisk the cocoa powder and flour together and set aside.
When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla
and the cocoa powder and flour mixture.
Mix only until combined.
With mixer still on low, slowly pour in the cooled butter
and mix again just until combined.
Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish.
Bake for 55 minutes. The center will appear very under-baked; this dessert is between a brownie and a pudding and a lava cake :)
Allow to cool slightly and serve with vanilla ice cream.

Peanut Butter Coconut Chipsters

Do you ever have a day when you just really NEED a cookie?  Cookies somehow just have a way of making everything better.  A cookie and a glass of milk is what I need right now.  How about you?

Peanut Butter Coconut Chipsters
2 cups plus 6 tbsp. all-purpose flour
½ tsp. baking soda
½ tsp. salt
10 tbsp. unsalted butter, melted and cooled until warm
1 cup brown sugar, packed
½ cup granulated sugar
2/3 cup creamy peanut butter
1 large egg plus 1 egg yolk
2 tsp. vanilla extract
1 ½ cups semi-sweet chocolate chips
½ cup shredded sweetened coconut

Preheat oven 325°.  Line two cookie sheets with parchment paper.
Whisk dry ingredients together in a medium bowl; set aside.

Place butter, sugars and peanut butter in a bowl.

Mix until thoroughly combined.

Add in egg and yolk

then add vanilla.  Mix until combined.

Add dry ingredients and beat at low-speed
just until combined.

Stir in chocolate chips and coconut.

Scoop about 2 tablespoons of dough into a ball, making sure the dough is fairly well packed. 
Then flatten slightly before placing on the parchment lined baking sheet.
Bake until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy (approximately 11 minutes). Do not overbake.

Allow cookies to cool on a wire rack.

Okay okay, forget the cookies cooling on the rack.  We all know that cookies taste better warm (just as long as you don’t mind a little mess).

Warm or cooled, these cookies are good

and even better with a glass of milk.
