After the last few bouts of sickness in our house, we needed a little pick me up. Something sweet, rich, buttery and full of color…. yes, these Samoa M&M Blondie bars did just the trick. It seems that everyone is feeling better around here (or at least well on their way). I think these Samoa M&M Blondies might have had a little something to do with it :)
Samoa M&M Blondies
1 1/4 cups unsalted butter
2 cups packed brown sugar
1/2 cup granulated sugar
2 large eggs
4 teaspoons vanilla extract
1/2 teaspoon kosher salt
2 1/2 cups all-purpose flour
2 1/2 cups sweetened flaked coconut
1 (12 oz.) bag mini M&Ms (with a few reserved for the top)
Preheat oven to 350 degrees F. Line a 9×13 pan with foil and spray lightly with nonsticking spray.
Heat butter in a small saucepan over medium heat until it browns and begins to smell nutty (watch it closely so it doesn’t burn). Allow the butter to cool slightly.
In a large mixing bowl, combine the browned butter and sugars.
Stir in eggs, vanilla and salt.
Add the flour
and stir just until combined.
Add the coconut and M&Ms
and stir to combine.
Pour the batter into the prepared pan and smooth the top with a rubber spatula.
Sprinkle a few additional M&Ms on top.
Bake for 25 to 30 minutes.
Let the blondies cool completely before turning them out onto a cutting board and slicing into squares.
Serve
and enjoy!

I can not preheat my oven to 350 degrees, its too hot. Can I also do it on a lower themperatur ?
Because I did it on 225 degrees and my m&m’s became a bit burned and they also lost there collor.
It tastes good but it doesnt look verry nice :o like that.

YUM! These are great. A little too much butter, but that's nothing that a little experimenting with the recipe can't fix. I have just finished baking them and can already tell they will be a fast favorite. I will definitely be making more of these, thank you for sharing!

I'm British, so I had to convert all your measurements into lbs and ozs, but it was totally worth the effort! They went down a treat! Although, the second batch I made, I used Smarties instead of M&Ms, and they completely lost their colour. Stupid natural colourings….

Does it matter if I use regular salt rather than Kosher salt?
Regular salt will work just fine.
is the coconut optional?
Leaving the coconut out might change the texture a bit but I’m sure they would still be tasty :)
im bakig them RIGHT NOW!! theyre kind of jiggly so far and its been 27 min… is that bad?! obviously i dont bake much. but they smell dang good…

Yes, they will even continue to “cook” in the hot pan once you take them out of the oven. Let them cool completely to set before cutting them.
