Speaking of Drew, here are the cupcakes I made to celebrate his second birthday.
Rich Chocolate Cupcakes with Cream Cheese Frosting
1 (18.25 ounce) package devil’s food cake mix
1 (5.9 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs
1/2 cup warm water
2 cups mini semisweet chocolate chips
Preheat oven to 350 degrees.
In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water.
Add the chocolate chips
and stir to combine.
For those of you that ask what my kids are doing while I’m baking,
here they are standing on chairs helping and overseeing. This is what they are typically doing :)
Use an ice cream scooper to scoop batter into greased or cup-lined muffin tins.
Bake for 20 to 24 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool completely before frosting.
Cream Cheese Frosting
1/2 cup butter, softened
8 ounces of cream cheese, softened
1 box powdered sugar
1 teaspoon vanilla extract
Mix the butter and cream cheese together.
Add the powdered sugar
and beat until smooth.
Add the vanilla
and stir to combine.
Frost cupcakes and enjoy!

SOOO Good! Just made this, but had to do some improvising. Used a white cake mix, sugarfree chocolate instant pudding, and 1 c. butterscotch chips. Made 1 12 pack of cupcakes and then added a mashed banana to the rest of the batter – both ways where so delicious! I was out of powdered sugar – so will have to add the frosting tomorrow – I think I will flavor it with banana too and top with a
